Biocomposting
We are currently composting materials from our full and fast food service restaurants and fresh food producer at The Forks Market.
Between our 5 full-service restaurants, 15 fast food merchants, 7 fresh food producers and hotel, we go through a lot of organic materials. As a matter of fact, 80% of our “garbage” is compostable. So, we bought a commercial-grade biocomposter and implemented a program that diverts organics from the waste stream.
Organic waste from The Forks Market is placed into our HOBART/Somat eCorrect Waste Composter biocomposter. Once the contents have cooked for almost a day, they are placed in the site Biovator composter which is mixed with the grass clippings and leaves from the site. From this, we get clean, viable compost that is used in our soils and gardens. Nutrient-rich water is also collected from Market biocomposter is perfect for fertilizing our grasses and trees.
